Turmeric chicken + potatoes

Leftover turmeric chicken, pearl barley + mushroom soup

SERVES 4

1 leftover roast chicken carcass (page 136)

250g chestnut mushrooms, finely chopped

25g dried porcini mushrooms soaked in boiling water then roughly chopped

1 onion, chopped

2 garlic cloves, crushed

2 carrots, peeled and cut into cubes

2 celery sticks, sliced

small bunch of fresh thyme

100g pearl barley

½ tsp garlic salt

½ tsp chilli flakes

½ tsp paprika

½ tsp mushroom powder (optional)

1 litre chicken stock (made with 2 stock cubes or bought fresh)

salt and freshly ground black pepper

100ml double cream
